Latkes without all the gelt

Hanukkah is just around the corner. Unlike gelfilte fish, potato latkes are a must-have for this Jewish holiday. In our family we enjoy potato latkes right after we light the Menorah and open our gifts (hoping it’s not the night where we get a pair of socks or batteries for another wrapped gift.) Traditionally, potato latkes are fried in oil. Not exactly high on the MMMunch recommended list. But, here’s a healthier baked version.
