Meatless Monday

C’mon join the movement.  And no you don’t have to knock on doors to share your gospel. All you have to do is – just for one day a week – don’t eat meat.  Don’t you want that smug feeling of knowing you’re reducing your carbon footprint, doing your body good, and saving precious resources like fresh water and fossil fuel all in one day? You can do that, right?

To get you started here’s a really easy, delish kale recipe that even my kale-hating friend John would love.  Try it today.

Kale with Raisins and Toasted Pine Nuts from Greens Glorius Greens

¼ cup toasted pine nuts

¾ pound of kale (about 6 cups chopped)

2 cups water

2 teaspoons extra virgin olive oil

2 garlic cloves, minced

1/3 cup raisins

salt to taste

  1. Place pine nuts on a cookie sheet and bake at 325 for 5 minutes or until golden brown.  Keep an eye on them so as not to burn them.
  2. Wash kale and strip the leaves off the stalk.  Roughly chop the kale.  Bring the water to a boil in a skillet that has a tight fitting-lid.  Add the kale and cook, covered, over high heat, stirring occasionally for about 5 minutes.  Remove and drain
  3. Rinse out and dry skillet, then use it to heat the olive oil over medium heat, lifting and tilting the pan to coat.  Add garlic and sauté for 15 seconds.  Add raisins and sauté for 30 seconds-1 minute, stirring constantly to prevent burning.  Raisins should be glossy and slightly puffed.
  4. Add greens and stir to combine.  Season with salt to taste and cover for a minute until greens are heated through. Serve hot, garnished with the toasted pine nuts.
