Rock the crock

This is for all of you breakfast skippers, you know who you are. You don’t eat in the morning and then when you get to work you furiously stuff food in your face during your staff meeting.  I have two words for you – crock and pot.

How many of you own a crock pot? I know the name alone gets you thinking cream of mushroom soup chicken and key parties.  Au contraire, a crock pot can be a busy person’s new bff and a huge time saver.  (They’re also cheap. I just got a new one for $29.99.  )

Here’s how to get a hot, healthy breakfast in the morning without having to get out of bed.   Load up your crock pot before you hit the sheets, let it cook all night and in the morning, voila! Crockpot Oatmeal Recipe

2 cups steel cut oats (not instant or rolled oats)

6-8 cups water, depending on how long the oatmeal will cook

add ins

vanilla, apples, raisins and other dried fruit nuts, honey etc

1 tsp. vanilla

2 apples, peeled and diced

1 cup raisins

1 cup sliced bananas

1/2 cup chopped walnuts

If you’re planning to cook the oatmeal 8 hours or longer, use 8 cups of water. If you want to cook it less than 8 hours, use 6 cups of water. Put ingredients in slow cooker and cook on low.
